
Air Fried Chicken Chimis

Ingredients
1 1/2 pounds chicken breast, diced
1/4 teaspoon each cumin, oregano, garlic powder, pepper
1/2 teaspoon salt
1/2 cup green salsa
1 can of pinto beans
1/4 cup green salsa
1 pouch Trader Joe's Frozen Brown Rice
1 tablespoon chopped cilantro
2 tablespoons lime juice
1/2 cup whipped cream cheese
1/2 cup sour cream
1-2 tablespoons half and half
1/2 teaspoon garlic powder
2 oz chopped canned jalapeños
Large Tortillas
Avocado Oil Spray
1 cup shredded sharp cheddar
Sour cream, chopped cilantro, and sliced green onions for serving

Directions
Dice chicken into small bite-size pieces. Season with garlic powder, oregano, cumin, salt, and pepper
Spray sauté pan with avocado oil. Cook chicken on medium high heat until browned and cooked through. Add salsa to deglaze the pan and cook chicken. Set aside
Heat beans and small sauce pan with salsa. Allow to simmer until thickened. Set aside
Cook brown rice according to directions on package. Mix with cilantro and lime juice. Set aside
In a food processor, blend all jalapeño cream cheese ingredients. Start with only one tablespoon of half and check the consistency. You don’t want it too thick or too runny and will depend on the thicknesses your sour cream and cream cheese
Heat tortilla on skillet or in microwave for about 15-20 seconds so it’s ready to warp without tearing. Layer rice, beans, chicken and a spoonful of the jalapeño cream cheese. Fold in ends and wrap
Place burritos in basket of air fryer. Spray burritos with avocado oil spray and cook at 400° for about 5-7 minutes until tortillas begins to brown
Top each burrito with a layer of the jalapeño cream cheese and shredded sharp cheddar. Place back in air fryer for 2 to 3 minutes until cheese is bubbly. You can lime basket of air fryer with tinfoil to avoid a mess if you’d like
Serve with sour cream, chopped cilantro, and sliced green onions. Makes four burritos.
