Arugula Kale Pesto

Ingredients

  • 2 cups chopped kale

  • 1 large handful arugula

  • 1/4 cup olive oil

  • 1/4 cup parmesan (or nutritional yeast for vegan)

  • 1 tbsp apple cider vinegar

  • 1 tbsp tahini 

  • to taste: salt & pepper

Directions

  1. Add all ingredients to a food processor or high speed blender and blend until ingredients start to combine

  2. When ingredients start to combine, add 1/4 cup warm water

  3. Blend until fully combined and desired consistency is achieved

  4. Serve with your favorite pasta!
