Bacon Ravioli Carbonara

Ingredients

  • Trader Joe’s Brussel Sprouts & Uncured Bacon Ravioli

  • 1 egg

  • 3 tbsp freshly grated pecorino romano cheese

  • 3 tbsp freshly grated parmigiana reggiano cheese

  • 1 tbsp butter

  • 3 cloves garlic, minced

  • 1/3 cup white wine (Sauvignon Blanc)

  • Chopped parsley for garnish

  • Freshly cracked pepper to taste

Directions

  1. In a small mixing bowl, stir together egg and cheeses with a fork. Set aside

  2. Cook ravioli according to package instructions, drain and add to a large mixing bowl. Set aside to cool

  3. Heat butter in a large skillet and add garlic. Sauté for 1 minute, until garlic becomes fragrant. Add wine to pan and let wine cook down until reduced to half

  4. Combine cooked ravioli and cheese mixture. Toss until evenly coated. Add into skillet with garlic wine sauce and stir to combine

  5. Top with freshly cracked pepper and parsley

  6. Serve and enjoy!
