Mother's Day weekend is here and Pat the Spatula has the perfect brunch recipe for you! These Baked Egg Bread Boats are a must for any brunch spread! Using a handful of ingredients, these boats can be customized any way you want! Don't forget the Chili Onion Crunch! Pat the Spatula is wishing all you mamas out there a Happy Mother's Day!
To create your “boats”, using a knife or your fingers, gently pull the inside of the roll out, leaving about 1/4 inch of room to accommodate your cheese and eggs
Brush the top/outside of the rolls with olive oil and place in the pan. Sprinkle the insides of your bread boats with half of the cheese. Crack an egg into a small bowl, and carefully transfer to the bread boat. Repeat the process with remaining egg. Sprinkle with seasoning and top with remaining cheese
Bake for 20-24 minutes, or until eggs are cooked to your preference. (Throw in the tops of the rolls toward the end of baking to crisp up, if desired)
Drizzle with Chili Onion Crunch and top with fresh herbs, if desired
