Ingredients

One 16 oz loaf Trader Joe’s Vegan Banana Bread with Walnuts, cut into 1-inch cubes
2 large eggs
1 cup milk
1 medium ripe mashed banana
1/4 cup sugar
1/4 cup unsalted butter
1 1/2 pure vanilla extract
Garnish: sliced banana, powdered sugar

Directions

Preheat oven to 350ºF
Spray a 11X7 or 8X8 baking pan with coconut oil
Evenly lay banana bread pieces in the pan. Add eggs, milk, mashed banana, sugar, melted butter, and vanilla to a large bowl. Whisk until well mixed
Pour the mixture over the bread
Bake for 30-40 minutes, or until light golden brown
Top with a dusting of powdered sugar and sliced banana, if desired
Serve and enjoy!
