
BBQ Chicken Quinoa Salad

Ingredients
- Chopped romaine
1 cup cooked quinoa
2 cups shredded BBQ chicken
- 1 avocado, sliced
- Corn salad recipe (see below) with a can black beans
- Chips for serving
- 6 oz bag frozen fire-roasted corn; cook as directed on the bag, then cool to room temperature
- 2 jalapeño, seeded and minced
- 1/2 cup diced red or green onion
- 3/4 cup cotija cheese
- 1/3 cup chopped fresh cilantro
- 2 cloves garlic, minced
juice of 1 lime, about 2 tablespoons
- 1 teaspoon chili powder
- 1 teaspoon paprika
- 1/4 teaspoon sea salt
- 1/4 teaspoon ground pepper

Directions
Over a bed of romaine, toss together the quinoa, black beans, chicken and avocado
Mix together ingredients of corn salad
Serve with a few chips for dipping and add extra bbq sauce as needed
