BBQ Chicken Quinoa Salad

Ingredients

    Salad

  • Chopped romaine
  • 1 cup cooked quinoa

  • 2 cups shredded BBQ chicken

  • 1 avocado, sliced
  • Corn salad recipe (see below) with a can black beans
  • Chips for serving
  • Corn Salad

  • 6 oz bag frozen fire-roasted corn; cook as directed on the bag, then cool to room temperature
  • 2 jalapeño, seeded and minced
  • 1/2 cup diced red or green onion
  • 3/4 cup cotija cheese
  • 1/3 cup chopped fresh cilantro
  • 2 cloves garlic, minced
  • juice of 1 lime, about 2 tablespoons

  • 1 teaspoon chili powder
  • 1 teaspoon paprika
  • 1/4 teaspoon sea salt
  • 1/4 teaspoon ground pepper

Directions

  1. Over a bed of romaine, toss together the quinoa, black beans, chicken and avocado

  2. Mix together ingredients of corn salad

  3. Serve with a few chips for dipping and add extra bbq sauce as needed

  4. Enjoy!
