Ingredients

  • 1 tbsp olive oil

  • 1 medium onion diced

  • 1 lb lean ground beef

  • 1 can black beans, drained and rinsed

  • 2 tbsp tomato paste

  • 28 oz can crushed tomatoes

  • 1 cup beef broth

  • 1 tbsp garlic powder

  • 3/4 tbsp chili powder

  • 1/2 tsp chipotle powder

  • 1.5 tbsp cumin

  • 2 tsp salt

  • 1/2 tsp black pepper

  • Optional for serving: shredded cheese, sour cream, avocado, tortilla chips

Directions

  1. n a large pot over medium heat, heat the oil and sauté the diced onions until they are starting to brown

  2. Add the beef, tomato paste, and all of the spices. Let this cook for about 5-10 minutes or until the beef is nice and brown. The more you brown the meat, the better the flavor will be

  3. When the beef is just about done browning, add the crushed tomatoes, mix well and let this come to a low boil

  4. Add the beans and beef broth and then cover and cook on low heat for 25-30 minutes

  5. Turn off heat and serve immediately with your favorite toppings or eat alone

  6. Enjoy!
