
Beef Ragu

Ingredients
1 lb ground beef
1 28 oz can whole tomatoes
1/2 yellow onion
1-2 carrots
2 cloves garlic, crushed
1-2 tsp tomato paste
Parmesan to taste
Pasta of choice
Directions
Blitz onion, garlic, and carrots in a food processor or blender until almost pureed
In a heavy pot, coat with olive oil on medium heat
Sauté onion, garlic, and carrot mixture until fragrant
Add in tomato paste
Add ground beef, breaking apart into small pieces
Add in whole tomatoes, crushing by hand (leave some sauce behind)
Season with salt & pepper to taste
Turn heat up until sauce comes to a boil
Turn down heat, cover, and simmer for 1-2 hours
Stir sauce every 30-45 minutes
Prepare pasta according to your liking (reserve some pasta water and add to ragu)
Mix pasta with ragu and top with freshly grated parmesan and parsley for garnish
