This recipe is a no brainer when it comes to taking your breakfast or brunch game to the next level. It's super simple and you can add as many or few ingredients your tastebuds desire! First, prep breakfast sausage. Remove sausage from casings and cook in a lightly oiled pan over medium heat. Use a spatula to break up the meat and cook until browned. Set aside
Dice onion and sauté in the same pan until browned. Season with salt to taste. Set aside
In the same pan, scramble eggs over low heat. Turn heat off when eggs are 90% cooked- they should be moist and fluffy. Season with salt and pepper to taste. Set aside
Lightly flour a work surface and prep biscuit dough. Separate biscuits and place onto floured work surface 4 across & 4 down- sides touching. Roll biscuit dough into a large rectangle with a rolling pin
To build roll-up, layer cheese, caramelized onions, chicken breakfast sausage and scrambled eggs onto biscuit dough
Roll dough lengthwise and slice into 1-inch rounds
Lightly butter a casserole dish and Place roll-ups into dish cut side down
Bake in oven @ 375ºF for 15 minutes or until golden brown. Remove from oven
Melt 2 tbsp butter in a microwave safe dish and brush over biscuit roll-ups. Sprinkle with chopped parsley
