In a large skillet over medium heat, add a drizzle of oil and sauté the diced onion and bell pepper until they are softened and just beginning to caramelize, about 4–5 minutes
Add the ground beef to the skillet with the vegetables. Break it up with a spoon and cook until it’s fully browned. Drain any excess fat if needed
Stir in the ketchup, Dijon mustard, and brown sugar. Mix well so that the meat and vegetables are evenly coated. Season with salt and pepper to taste
Reduce the heat to low and let the mixture simmer for about 5–10 minutes. This allows the flavors to meld together and the sauce to thicken slightly
