Pat loves quick and easy summer appetizers and is so excited to share this new burrata crostini recipe with you that can be made two ways! Summer veggies are Pat's favorite and paired with a nice glass of chilled white wine, this recipe is what Pat calls perfection! Pat hopes you enjoy this recipe idea next time you are looking for something to serve poolside or at a backyard hang!
Spread your baguette with butter or olive oil and cook on grill or grill pan
Spread burrata on warm baguette slices so it softens/melts a bit. Best to do this when the bread is still hot, straight from the grill
Top one baguette half with sliced tomatoes and basil leaves. Drizzle with balsamic glaze and season with salt and pepper. Optional, throw tomatoes on grill pan for a minute to get them soft and bursting with flavor
Top other baguette half with grilled corn and cilantro leaves. Season with salt, pepper, and Elote seasoning to taste
