Butternut Squash & Apple Soup

Ingredients

  • 1 butternut squash

  • 1 apple

  • 1 yellow onion

  • 4 cups of broth

  • Salt & nutmeg, to taste

  • Fresh parsley & sour cream to garnish

Directions

  1. Peel and chop the butternut squash, apple, and onion

  2. In a pan on medium heat sauté the onion for 5 minutes, until soft

  3. Add butternut squash, apples and broth and simmer for 30 minutes or until squash is soft

  4. Transfer to blender and blend until smooth

  5. Add nutmeg and salt to taste

  6. Garnish with sour cream and parsley

  7. Enjoy!
