There's a brand new sauce on shelves at Trader Joe's and Pat could not be more excited! It's delicious and full of flavor which makes this Cacio e Pepe Chicken Lasagna recipe incredible! Pat hopes your tastebuds will be asking for more and you enjoy!
1/2 tablespoon of softened butter or olive oil spray
Preheat oven to 350°. Grease bottom of baking dish with butter or olive oil. Set aside
Mix ricotta cheese, egg, Parmesan, salt and pepper until well combined. Fold in shredded chicken to the ricotta mixture
Heat Cacio E Pepe in saucepan on stovetop or in microwave (this makes it easier to spread, it’s a little thick). Spread about 1/2 cup of sauce on bottom of baking dish
Arrange 4-5 lasagna noodles over the sauce. Spread chicken and ricotta mixture over the noodles and sprinkle with 1/2 cup shredded mozzarella
Spread more Cacio E Pepe sauce over the cheese. Repeat layering process until final layer which will be noodles, then Cacio E Pepe sauce, then mozzarella. Add extra Parmesan and dried parsley to top if desired
Bake for 30 minutes until cheese is golden and bubbly. Allow to sit for 5-10 minutes before cutting and serving
