Ingredients

  • Ridge Cut Kettle Cooked Potato Chips (with sea salt)
  • Chopped cherry tomatoes

  • Chopped red onion
  • Vegan Kale, Cashew, and Basil Pesto
  • Fresh Mozzarella Cheese Pearls
  • Chopped fresh basil

  • Balsamic glaze

Directions

  1. Lay desired amount of chips on a plate. (Make sure they are flat instead of folded)

  2. In a bowl, combine tomatoes and onion with pesto (a little goes a long way)

  3. Top each chip with a small amount of tomato mixture

  4. Add mozzarella cheese pearls

  5. Finish with fresh basil and balsamic glaze.
