
Caprese Chips

Ingredients
- Ridge Cut Kettle Cooked Potato Chips (with sea salt)
Chopped cherry tomatoes
- Chopped red onion
- Vegan Kale, Cashew, and Basil Pesto
- Fresh Mozzarella Cheese Pearls
Chopped fresh basil
Balsamic glaze
Directions
Lay desired amount of chips on a plate. (Make sure they are flat instead of folded)
In a bowl, combine tomatoes and onion with pesto (a little goes a long way)
Top each chip with a small amount of tomato mixture
Add mozzarella cheese pearls
Finish with fresh basil and balsamic glaze.
