Caramelized Onion Goat Cheese Pasta

Ingredients

  • 8 oz. fusilli pasta

  • 8 oz. broccoli florets

  • One package Caramelized Onion Goat Cheese

  • 2 tbsp. Olive oil or butter

  • 1/2 cup pasta water

  • Salt & Pepper to taste

  • Grated Parmesan cheese, for topping

  • 1/4 tsp. Crushed red pepper flakes (optional)

Directions

  1. Cook pasta in according to package directions. With about 4 minutes remaining, add broccoli and cook until pasta is al dente and broccoli is tender

  2. Reserve 1/2 cup pasta water. Drain pasta and broccoli, and set aside

  3. Bring pot to low heat. Add olive oil (or butter) pasta water, and goat cheese and stir constantly until cheese is melted

  4. Add pasta and broccoli and stir until well coated. Add salt and pepper to taste

  5. Top with Parmesan and red pepper flakes, if using

  6. Serve and enjoy!
