Pat loves a meal that only requires a few ingredients and is so excited to share this new vegan carrot ginger miso noodle recipe with you! With all ingredients from Trader Joe's, Pat hopes you will give this a try!
1 package firm tofu
1 container of stir fry vegetables
1 bag of shredded cabbage
Rice noodles
Carrot Ginger miso dressing
In a large pan over low-medium heat, add a drizzle of oil. Add stir fry vegetables and shredded cabbage and sautée
Press tofu to get out the excess water and then slice into desired size
Add tofu to a bowl and season with whatever you like (Pat likes minced garlic, fresh ginger, umami seasoning, salt, & pepper
Add some oil to a pan and cook tofu until crispy
Prepare rice noodles according to package instructions
Add everything to a large bowl and toss with carrot ginger miso dressing
