Soup season is officially here and Pat is so excited to share this easy new recipe with you! Pat hopes you will enjoy this recipe while cuddled up, watching your favorite show, or reading your favorite book!
1 bag of Trader Joe's frozen mashed cauliflower
2 cups freshly shredded white sharp cheddar (loosely packed)
1/4 cup light sour cream
1 1/2 cups diced broccolini florets
1 1/2 cups chicken or vegetable broth
1/2 teaspoon onion salt
1/2 teaspoon pepper
1/2 teaspoon garlic powder
1 tablespoon dijon mustard
1 dash of paprika
Add the frozen mashed cauliflower and a splash of broth to a pot and heat over medium to defrost, cover. It won’t take long.
When the cauliflower is half defrosted add in the diced broccolini florets and stir. Cover again until cauliflower is completely defrosted.
Add all of the broth and stir. Some of it will cook down. Add cheese and sour cream and stir until melted.
Add onion salt, black pepper, garlic powder, paprika, and dijon mustard then stir again to mix the spices in.
Separate into bowls and top with more cheese if you'd like! You could also dice some green onion or top with hot sauce. Enjoy!
