
Cheesy Tater Tot Bites

Ingredients
- 30 Tater Tots
1 1/2 cups shredded sharp cheddar
3–4 slices cooked & crumbled bacon
2 tbsp. sour cream
1/4 cup scallions
Directions
- Preheat oven to 400ºF. Cook tots for 20 minutes, until golden brown. Meanwhile, sprinkle 2 tbsp. cheese in the cups of a 6-cup muffin pan.
- Once tots are golden brown, place 5 of them in each cup over the cheese. Sprinkle remaining cheese over the tots.
- Return to oven and bake for 10–15 minutes, until cheese has melted and tots are crispy.
- Meanwhile, cook bacon according to package directions and crumble. Carefully transfer tater tot cups to a serving plate.
- Top with sour cream, bacon, and scallions.
