Cheesy Tater Tot Bites

Ingredients

  • 30 Tater Tots
  • 1 1/2 cups shredded sharp cheddar

  • 3–4 slices cooked & crumbled bacon 

  • 2 tbsp. sour cream

  • 1/4 cup scallions

Directions

  1. Preheat oven to 400ºF. Cook tots for 20 minutes, until golden brown. Meanwhile, sprinkle 2 tbsp. cheese in the cups of a 6-cup muffin pan.
  2. Once tots are golden brown, place 5 of them in each cup over the cheese. Sprinkle remaining cheese over the tots.
  3. Return to oven and bake for 10–15 minutes, until cheese has melted and tots are crispy.
  4. Meanwhile, cook bacon according to package directions and crumble. Carefully transfer tater tot cups to a serving plate.
  5. Top with sour cream, bacon, and scallions.
  6. Serve & enjoy!
