
Chicken Chili

Ingredients
1 pound ground chicken (or turkey)
1 tablespoon avocado oil
1/2 diced onion
2 minced cloves of garlic
1 whole diced green bell pepper
2-3 tablespoons Trader Joe's Chili Seasoning Blend
1/2 teaspoon salt
1/2 teaspoon pepper
1 can cannellini beans
1 can diced tomatoes with green chilies
1 cup of chicken bone broth
Optional: hot sauce or salsa
Directions
Heat olive oil in Dutch oven and brown ground chicken
Once chicken is mostly cooked through, add in diced onions, peppers, garlic and seasonings. Cook a few minutes until veggies are softened
Add in beans, tomatoes, and bone broth and bring to a simmer. For a more spicy chili, add in salsa or hot sauce
Cook with lid on on medium heat for 15-20 minutes until chili is thickened
Top with your favorite chili toppings!
Pat likes plain Greek yogurt, sharp cheddar, cilantro and green onions with a side of cornbread!
