Chicken Chili

Ingredients

  • 1 pound ground chicken (or turkey)

  • 1 tablespoon avocado oil

  • 1/2 diced onion

  • 2 minced cloves of garlic

  • 1 whole diced green bell pepper

  • 2-3 tablespoons Trader Joe's Chili Seasoning Blend

  • 1/2 teaspoon salt

  • 1/2 teaspoon pepper 

  • 1 can cannellini beans

  • 1 can diced tomatoes with green chilies

  • 1 cup of chicken bone broth

  • Optional: hot sauce or salsa

Directions

  1. Heat olive oil in Dutch oven and brown ground chicken

  2. Once chicken is mostly cooked through, add in diced onions, peppers, garlic and seasonings. Cook a few minutes until veggies are softened

  3. Add in beans, tomatoes, and bone broth and bring to a simmer. For a more spicy chili, add in salsa or hot sauce

  4. Cook with lid on on medium heat for 15-20 minutes until chili is thickened

  5. Top with your favorite chili toppings!

  6. Pat likes plain Greek yogurt, sharp cheddar, cilantro and green onions with a side of cornbread!
