Ingredients

  • 4 chicken cutlets

  • Olive oil spray

  • 1 tablespoon of taco or fajita seasoning

  • 1/2 cup whipped cream cheese

  • 1/2 cup salsa

  • 1/2 of a green bell pepper, thinly sliced

  • 1/2 of a red bell pepper, thinly sliced

  • 1/2 of an onion, thinly sliced

  • 1 cup of shredded Mexican cheese blend

  • Chopped cilantro for serving

Directions

  1. Spray bottom of baker with olive oil spray and preheat oven to 400°

  2. Season chicken with taco seasoning and place in baking dish

  3. Mix whipped cream cheese and salsa together in bowl. Microwave for 15 seconds, stir, and repeat 2-3 more times until cream cheese is melted and completely combined with salsa

  4. Pour salsa cream cheese mixture over chicken

  5. Top with thinly sliced peppers and onions (make sure they are finely sliced so they cook well in oven). Top with shredded cheese

  6. Bake at 400° for 20 to 30 minutes until chicken reaches 165°. Cooking time will vary depending on thickness of your chicken breasts

  7. Broil for about 60 seconds at the end so the cheese gets nice and bubbly

  8. Top with cilantro and serve!
