Pat loves a delicious creamy soup for those colder days! With gnocchi and Trader Joe's new Holiday Vegetable Hash, Pat can't be more excited and hopes you will try this recipe this season!
1 cup Trader Joe's Holiday Vegetable Hash (can sub with 1/2 cup each diced celery and onions)
1/2 cup diced carrots
2 cloves minced garlic (not pictured)
Leaves of one sort of thyme
1 tablespoon flour
1 quart chicken broth
1 package gnocchi
1 cup milk (or half and half for extra richness)
2 large handfuls torn kale (Pat likes Trader Joe's Tuscan kale but any kale or even spinach works)
Salt and pepper to taste
Parmesan for serving
Directions
Heat tablespoon of olive oil or butter in Dutch oven. Add diced chicken and begin to brown
After chicken has began to brown, add TJâs Holiday Vegetable hash, carrots, garlic, salt, pepper, and thyme leaves. Cook for a few more minutes until veggies are softened and garlic is fragrant
Sprinkle in flour and allow to cook for a couple of minutes
Pour in chicken broth, bring to a simmer, cover, and allow to simmer for about 15 to 20 minutes
Remove lid and add in gnocchi, kale, and milk. Simmer for another 5-10 minutes
Add additional salt and pepper to taste, if needed and serve with Parmesan. Enjoy!
