Chicken Sausage & Tuscan Kale Tortellini Soup

Ingredients

  • 1-2 tablespoons olive oil

  • 1/2 cup diced carrots

  • 1/4 cup diced celery

  • 2 shallots, minced

  • 3 cloves garlic, minced

  • 1 sprig chopped rosemary

  • 2 sprigs of thyme leaves

  • 1/2 teaspoon dried basil

  • 1/2 teaspoon dried parsley

  • 1/2 teaspoon salt

  • 1/2 teaspoon cracked pepper

  • 1 bay leaf

  • 1 pound Italian chicken sausage

  • 1 quart chicken broth

  • Parmesan rind (optional)

  • Parmesan for serving (optional)

  • 1 sliced zuchinni 

  • 2-3 cups chopped kale

  • 1 package cheese tortellini

  • 1/2-1 cup milk or half and half

Directions

  1. Heat olive oil in Dutch oven and add in carrots, celery, and shallots. Sauté a few minutes until translucent

  2. Add minced garlic, rosemary, thyme, dried basil, dried parsley, salt, and pepper and sauté for about a minute until fragrant

  3. Add in chicken sausage and cook a few minutes on medium until it starts to brown

  4. Pour in chicken broth and bring to a simmer. Add in Parmesan rind and bay leaf and cover. Cook for 15-20 minutes on medium heat

  5. Uncover and add in zucchini, kale, tortellini, and milk. Simmer another 5-10 minutes until tortellini are cooked and zucchini are tender

  6. Remove Parmesan rind and bay leaf. Serve with grated Parmesan.
