Chicken Tortilla Soup with Air Fried Salty Lime Tortilla Strips

Ingredients

  • Avocado oil spray

  • 1 small onion, diced

  • 2 cloves garlic, minced

  • 1 jalapeño, finely diced (leave seeds and stems if you like it spicy)

  • 1/2 teaspoon each; smoked paprika, salt, and pepper

  • 1 teaspoon cumin

  • 1 quart chicken broth

  • 1 can black beans, drained and rinsed

  • 1 small can green chilies

  • 1 can fire roasted tomatoes

  • Juice of half of a lime

  • 1 pound of chicken breast

  • 1 cup frozen corn

  • 1/2 cup whipped cream cheese

  • Air Fried Salty Lime Tortilla Strips

  • 8 street sized corn tortillas (can use 4-5 regular sized corn tortillas)

  • Avocado oil spray

  • Squeeze of lime

  • Flaky sea salt

  • Toppings

  • Avocado

  • Cilantro

  • Lime wedges

  • Sour cream

  • Shredded cheese (Pat recommends Monterey Jack!)

  • Jalapeño slices

Directions

    Soup

    1. Sauté onions, garlic, and jalapeño until translucent in Dutch oven sprayed with avocado oil

    2. Add in seasonings and cook another minute until fragrant

    3. Pour in chicken broth, tomatoes, black beans, juice of half of a lime, and green chilies. Bring to a simmer and then add in raw chicken breasts

    4. Cover and allow to simmer for 20 to 25 minutes until flavors have melded and chicken is cooked through. While chicken cooks, make tortilla strips

    5. Remove chicken, shred, and add back to the pot

    6. Mix in cream cheese and frozen corn. Allow to heat through another 5 to 10 minutes

    7. Top with your favorite toppings, salty lime tortilla strips, and enjoy!

    Air Fried Salty Lime Tortilla Strips

    1. Cut tortillas in half and stack on top of each other. Cut into thin strips

    2. Squeeze a little bit of lime juice over tortilla strips and spray with avocado oil spray

    3. Cook in air fryer for 5 to 7 minutes at 400°. Keep an eye on it so they don’t burn!

    4. As soon as you remove from the heat, sprinkle with flaky sea salt.
