Chili Stuffed Delicata Squash

Directions

1. Preheat oven to 400ºF

2. Slice squash in half lengthwise and de-seed. Drizzle with olive oil and sprinkle with desired amount of salt & pepper

3. Place face down on a baking sheet and bake for 20-25 minutes, until tender and lightly browned

4. Meanwhile, heat chili in a small pot. Add corn and stir until hot

5. Remove squash from oven, but leave oven on

6. Flip squash halves over and fill evenly with chili

7. Top with cheese and return to the oven and bake until cheese is melted, 3-5 minutes 

8. Top as desired and enjoy!
