
Chili Stuffed Delicata Squash

Ingredients
2 delicata squash
Olive oil, for drizzle
Salt & Pepper
1 can vegetarian chili (or chili of choice)
1/2 cup frozen roasted corn
1/2 cup shredded cheddar cheese
Crispy jalapeño pieces, for topping
Cilantro (or scallions), for topping
Directions
Preheat oven to 400ºF
Slice squash in half lengthwise and de-seed. Drizzle with olive oil and sprinkle with desired amount of salt & pepper
Place face down on a baking sheet and bake for 20-25 minutes, until tender and lightly browned
Meanwhile, heat chili in a small pot. Add corn and stir until hot
Remove squash from oven, but leave oven on
Flip squash halves over and fill evenly with chili
Top with cheese and return to the oven and bake until cheese is melted, 3-5 minutes
Top as desired and enjoy!
