Chocolate Covered Peanut Butter Dates

Ingredients

  • Medjool or Deglet nour dates (number depends on how much you are making)

  • Peanut butter (or you can sub any nut butter)

  • 72% cacao dark chocolate chips

  • Coconut oil

Directions

  1. Cut a slit in each date and remove the pit

  2. Fill each date with peanut butter and set aside

  3. Place dark chocolate and about a teaspoon of coconut oil in a microwave safe bowl and microwave in 30-45 sec intervals stirring between each until chocolate is melted

  4. Dip each date into the melted chocolate and use a spoon to completely cover

  5. Sprinkle each chocolate covered date with a little sea salt and place in the fridge for at least 15 minutes to allow chocolate to harden

  6. Enjoy!
