Citrusy Garlic Sweet Potato Wedges with Garlic & Herb Yogurt Dip

Ingredients

  • 2 medium sweet potatoes

  • Avocado oil spray

  • Trader Joe’s citrusy garlic seasoning

  • Salt & pepper, to taste

  • Garlic & Herb Yogurt Dip

  • 1/2 cup plain Greek yogurt

  • 1 clove garlic, minced

  • Juice of 1/2 lemon

  • Handful of fresh mint & chives, finely chopped (or herbs of your choosing!)

  • Salt & pepper, to taste

Directions

  1. Preheat the oven to 400 degrees & line a baking sheet with parchment paper

  2. Clean, scrub, and cut sweet potatoes into thick wedges

  3. Place sweet potato wedges on parchment-lined baking sheet

  4. Spray wedges with avocado oil, and season with citrusy garlic seasoning, salt & pepper, on both sides

  5. Bake at 400 degrees for 30-40 minutes, flipping halfway through

  6. While wedges are baking, make the garlic & herb yogurt dip by combining all ingredients and mixing well

  7. Optional: broil the wedges on high for a few minutes after baking to get them extra crispy!

  8. Remove from oven & let cool

  9. Once wedges are cool enough to handle, plate & serve with garlic & herb yogurt dip

  10. Enjoy!
