
Colorful Fall Salad

Ingredients
spinach
sweet potato
red onion
Lucy glo apple
avocado
honey chèvre
pecans
1/2 tbsp pumpkin butter
1/2 tbsp dijon mustard
1 tbsp ACV
1 tbsp olive oil
1 tbsp chopped shallots
salt & pepper, to taste
Pumpkin Butter Dijon Dressing
Directions
chop and air fry sweet potato (400 for 15 minutes)
chop up rest of the ingredients and add to a big bowl. Add sweet potato once done
top with pumpkin butter Dijon dressing (recipe below)
enjoy!

Mix all ingredients together until well blended
