Ingredients

  • spinach

  • sweet potato

  • red onion

  • Lucy glo apple

  • avocado

  • honey chèvre

  • pecans

  • Pumpkin Butter Dijon Dressing

  • 1/2 tbsp pumpkin butter

  • 1/2 tbsp dijon mustard

  • 1 tbsp ACV

  • 1 tbsp olive oil

  • 1 tbsp chopped shallots

  • salt & pepper, to taste

Directions

  1. chop and air fry sweet potato (400 for 15 minutes)

  2. chop up rest of the ingredients and add to a big bowl. Add sweet potato once done

  3. top with pumpkin butter Dijon dressing (recipe below)

  4. enjoy!

Pumpkin Butter Dijon Dressing

  1. Mix all ingredients together until well blended
