Instant Pot Corned Beef & Cabbage

Ingredients

  • 3 lb Trader Joe's Uncured Corned Beef Brisket

  • 1 cup Guinness (or any dark ruby red or stout beer)

  • 1 cup beef broth

  • 1 onion

  • 1/2 head of cabbage

  • 1 lb small red potatoes

  • 1 lb carrots

  • Salt & pepper to taste

Directions

  1. Slice onion into large chunks and place at the bottom of the Instant Pot

  2. Place corned beef on top of onions and add beer and beef broth

  3. Select manual/pressure setting on high and cook for 1 1/2 hours (adjust according to the weight of meat)

  4. After 1 1/2 hours, let pressure release naturally for 15 minutes and quick release for any remaining pressure

  5. Remove beef from pot, place on cutting board, and tent with tin foil

  6. Remove onions from pot, keep 2 cups of liquid, and discard the rest

  7. Slice potatoes into quarters

  8. Add potatoes and carrots into pot with remaining 2 cups of liquid

  9. Season with salt & pepper

  10. Top with 1/2 head of cabbage

  11. Cook on high pressure for 5 minutes

  12. Let pressure release naturally for 5 minutes and quick release for any remaining pressure 

  13. Slice meat against the grain

  14. Optional: serve with sauerkraut and stone ground mustard

  15. Enjoy and shake your shamrock!
