Two items that always keep a smile on Pat's face creamy + basil. Top it on your favorite pasta and you will be in tastebud heaven (plus it's vegan!) Pat hopes you give this recipe a whirl next time you are craving something creamy!
1 cup raw cashews, soaked (either overnight or quick-boil method)
3/4 cup water
1/2 tsp garlic powder
2 tbsp nutritional yeast
1/2 cup fresh basil leaves, chopped
Salt & pepper, to taste
Crushed red pepper flakes, for garnish (optional)
Directions
Boil a pot of water and cook pasta of choice according to instructions
In a high-speed blender or food processor, combine all sauce ingredients (soaked cashews, water, garlic powder, nutritional yeast, basil leaves, salt & pepper)
Blend on high for 1-2 minutes or until smooth & creamy
Toss sauce with pasta while still warm & sprinkle crushed red pepper flakes (optional)
