
Creamy Boursin & Roasted Tomato Pasta
This cozy pasta dish is creamy, garlicky, and bursting with roasted tomato goodness. It’s perfect for a weeknight dinner when you want something impressive without a ton of effort. Ingredients
1 wheel Boursin cheese (Garlic & Herb)
1 pint cherry tomatoes
½ bag pasta of choice
2 Tbsp olive oil
Salt & pepper, to taste
Optional: ¼ cup chicken or bone broth (for extra creaminess)
Optional: Grated parmesan cheese, for serving
Directions
Preheat oven to 350°F.
Toss cherry tomatoes with olive oil, salt, and pepper in an oven-safe baking dish.
Place the Boursin cheese wheel in the center of the dish.
Bake for 35–40 minutes, until tomatoes are sizzling and starting to burst.
While the tomatoes and cheese bake, cook pasta according to package directions. Drain.
Remove the baking dish from the oven and stir the cheese and tomatoes together until creamy. (Add broth if you’d like a richer sauce.)
Add cooked pasta to the dish and toss to coat.
Garnish with parmesan, fresh herbs, or extra black pepper. Serve hot!
