Heat olive oil in large skillet and add sliced chicken sausage. Brown on both sides and then set sausage aside
Melt butter in skillet and add shallots and garlic. Sauté 2-3 minutes until fragrant. Season with salt and pepper
Pour in chicken broth and bring to a simmer. Add in spaghetti noodles, cover, and cook for 10-12minutes until noodles are al dente (stirring occasionally)
Mix in cream cheese, half and half, and Parmesan until creamy. Mix in spinach and stir until spinach wilts
Serve with extra Parm and enjoy!
