Ingredients
1 package Trader Joe's Teeny Tiny Potatoes
2 peeled cloves of garlic
3 sprigs of thyme
2 green onion stalks
1 tablespoon kosher or sea salt
1 tablespoon olive oil
1 tablespoon butter
Unexpected Cheddar Dipping Sauce
1 cup shredded Trader Joe's Unexpected Cheddar cheese
3/4 cup milk
1 tablespoon butter
1 tablespoon flour
Salt and pepper to taste
Directions
Bring potatoes, 2 sprigs of thyme, 1 clove of garlic, and 1 tablespoon of kosher or sea salt to boil
Cook for 12 to 15 minutes until potatoes are just barely fork tender
Drain potatoes and then slice in half lengthwise
Heat 1 tablespoon of olive oil, 1 tablespoon of butter, 1 whole clove of garlic, and 1 sprig of thyme until butter is melted
Add in sliced potatoes and sauté until crispy for 5 to 10 minutes over medium heat
Remove garlic clove and sprig of thyme and season potatoes with salt and pepper to taste
Garnish potatoes with sliced green onions and thyme leaves
Unexpected Cheddar Cheese Sauce
Melt 1 tablespoon of butter in saucepan
Whisk in 1 tablespoon of flour and allow to cook while whisking for about a minute
Whisk in 3/4 cup milk and bring to a simmer
Season with salt and pepper to taste
Stir in 1 cup of Trader Joe's Unexpected Cheddar cheese
Serve with potatoes and enjoy!
