Curried Chickpea Stuffed Sweet Potato

Ingredients

  • sweet potato

  • can of chickpeas

  • yellow onion

  • spinach

  • spicy pumpkin curry simmer sauce

Directions

  1. preheat oven to 450º

  2. pierce sweet potato with fork and bake until tender, about 45 minutes

  3. dice yellow onion and sauté over medium heat until tender

  4. drain and rinse chickpeas and add 1/2 cup to pan

  5. add 1/3 cup of simmer sauce to pan and mix well with chickpeas and onions

  6. add a few handfuls of spinach and stir until wilted

  7. once sweet potato is done, cut in half and top with curried chickpeas

  8. enjoy!
