Easter Deviled Eggs

Ingredients

  • Eggs

  • Food coloring or natural dye (blueberries, turmeric, onion skins, beets)

  • 1 tablespoon mayo (adjust amount according to how many you are making)

  • 1 tablespoon stone ground mustard (adjust amount according to how many you are making)

  • salt & pepper to taste

  • paprika for garnish

Directions

  1. Hard boil eggs (either by stove or Instant Pot). If using Instant Pot, add 2-4 cups of water and set to high for 8 minutes

  2. Once eggs are done, immediately place into an ice bath for 5 minutes

  3. Get dye ready in separate cups/bowls

  4. Add a splash of vinegar to each dye

  5. Peel eggs, leave whole, and submerge in dye

  6. Leave eggs in dye for 12-15 minutes. Check every few minutes to get desired color

  7. Once eggs are to the desired color, slice in half, remove and place yolks in a separate bowl

  8. Add mayo, mustard, salt & pepper to the yolks and blend together until smooth and creamy

  9. With a piping bag or spoon, dollop egg mixture into each hard boiled egg

  10. Garnish with paprika
