Eggplant Milanese Salad

Ingredients

  • 1 medium eggplant

  • ½ cup of panko breadcrumbs

  • 1 egg

  • 1 tbsp Trader Joe's Spicy Italian seasoning

  • Arugula

  • Cherry tomatoes

  • Shaved parmesan cheese

  • Balsamic glaze

Directions

  1. Preheat oven to 425

  2. Peel eggplant cut into rounds and salt it generously. Let sit for 10-15 minutes to draw out moisture (this is optional but will make it better so if you have the time, do it)

  3. Dry off eggplant and wipe off salt

  4. Crack egg in bowl, whisk and add a tbsp of water

  5. Mix panko with Spicy Italian seasoning and mix well

  6. Coat eggplant first in egg mixture then panko and set on prepared baking sheet, repeat until all rounds are covered

  7. Bake in oven for 15 minutes, flip and bake for another 15 until crispy

  8. To make salad: put down arugula, top with eggplant rounds, tomatoes, shaved parmesan and drizzle balsamic glaze

  9. Enjoy!
