Feta Meatballs

Ingredients

  • 1 lb ground lamb, beef or pork

  • 1 tbsp olive oil (only necessary if using leaner ground beef)

  • 3 oz feta cheese

  • 1 egg

  • 1/4 cup seasoned bread crumbs (If using unseasoned bread crumbs, add 1/2 tsp salt) 

  • 1/4 cup onion chopped
  • 1 tbsp garlic minced
  • 1 tbsp fresh parsley minced
  • 1 tbsp fresh cilantro minced
  • 1/2 tsp cumin
  • 1/2 tsp oregano
  • 1/4 tsp black pepper
  • 1/2 lemon juiced and seeds removed

Directions

  1. Preheat oven to 400ºF

  2. Combine all ingredients in a bowl and mix

  3. Roll into meatballs. You should make somewhere between 20 and 24 meatballs depending on size

  4. Bake for 25-30 minutes

  5. Enjoy!
