
Feta Meatballs

Ingredients
1 lb ground lamb, beef or pork
1 tbsp olive oil (only necessary if using leaner ground beef)
3 oz feta cheese
1 egg
1/4 cup seasoned bread crumbs (If using unseasoned bread crumbs, add 1/2 tsp salt)
- 1/4 cup onion chopped
- 1 tbsp garlic minced
- 1 tbsp fresh parsley minced
- 1 tbsp fresh cilantro minced
- 1/2 tsp cumin
- 1/2 tsp oregano
- 1/4 tsp black pepper
1/2 lemon juiced and seeds removed
Directions
Preheat oven to 400ºF
Combine all ingredients in a bowl and mix
Roll into meatballs. You should make somewhere between 20 and 24 meatballs depending on size
Bake for 25-30 minutes
