Fish Taco Salad

Ingredients

  • 1 pack Frozen Battered Halibut (6-8 pieces)

  • 1 bag mixed greens

  • 1 mango, diced

  • 1 avocado, diced

  • 4 corn tortillas cut into strips. Instead of making your own, you can just crush up tortilla chips. 

  • 2 tbsp cooking oil

  • 1 pack cherry or grape tomatoes cut in half

  • optional: chipotle ranch dressing or any spicy ranch, avocado ranch, or poblano dressing will go with this dish

  • Slaw

  • 16 oz pre shredded bag of Cole Slaw

  • 3/4 cup mayonnaise

  • 3 tbsp lime juice

  • 1 tbsp vinegar

  • 1/4 tsp sea salt

  • 1/4 tsp black pepper

  • 1/2 tsp garlic powder

  • 2 tsp honey (optional)

Directions

  1. Cook the fish per the package instructions

  2. Make the slaw by combining the slaw ingredients and letting it sit for at least ten minutes

  3. Cut the tortillas into strips and crisp up with oil in a sauté pan on medium heat. Once they are crisp, add a pinch of salt on them

  4. Dice the avocado and the mango into 1/2" cubes

  5. Cut the tomatoes in half

  6. Assemble the salad by laying down your greens, adding the slaw on top, add the fish, then add the corn tortilla strips or chips, and top with avocado, mango and tomatoes. You can also add a few squeezes of lime juice.

  7. Top with dressing and enjoy!
