French Onion Gnocchi Soup

Ingredients

  • 1 tablespoon olive oil

  • 2 tablespoons butter

  • 2 1/2 large sweet onions (or 3 small), thinly sliced

  • 1 tablespoon sugar

  • 1/2 teaspoon salt

  • 1/8 teaspoon black pepper

  • Thyme leaves from about 3 sprigs

  • 1 clove of garlic, minced

  • 1 tablespoon flour

  • 1 tablespoon Worcestershire sauce

  • 1 quart beef broth

  • 1 16 oz package of gnocchi

  • 3/4 cup shredded gruyere cheese

  • 1/4 cup shredded Parmesan

Directions

  1. Heat large pot with olive oil and butter, add thinly sliced onions and begin to brown. Cook on medium, stirring constantly for about 5 minutes

  2. Add sugar and sauté another 10 minutes or so until onions are soft and brown

  3. Add garlic, salt, pepper, and thyme leaves and sauté another couple of minutes

  4. Add flour and sauté for 2-3 minutes until flour is cooked, scraping bits from the bottom of the pan as you go

  5. Add Worcestershire sauce and beef broth, Bring to a boil. Cover and allow to simmer about 5 minutes

  6. Add gnocchi and cook for 3 to 5 minutes or according to directions on package

  7. Spoon soup into individual ramekins or oven safe bowls. Top with shredded Gruyere and Parmesan

  8. Please bowls on baking sheet under broiler for 2 to 3 minutes until cheese is bubbly.
