Fried Halloumi Greek Salad

Ingredients

  • 6 oz. halloumi, pat dry and cut into 1/2 inch thick squares

  • 1 tbsp olive oil

  • 7 oz. chopped butter lettuce

  • 1/3 English cucumber, sliced and halved

  • 1/2 cup cherry tomatoes, halved

  • 1/3 cup olives of choice

  • 1/4 cup banana rings

  • 1 avocado, cut into cubes

  • 1 tbsp fresh chopped dill

  • 2 tbsp Trader Joe’s organic cucumber kefir dressing, or more/less to taste

  • Lemon wedges for serving

Directions

  1. Drizzle olive oil in a skillet over medium high heat.

  2. Add halloumi pieces in a single layer, let cook 2-3 minutes per side or until they're crispy on the outside. 

  3. Assemble salad by combining all of the ingredients then tossing with the cucumber kefir dressing. Serve with lemon wedges and enjoy!
