Ingredients

  • 1 head romaine, shredded
  • 1 cup brown rice, cooked according to the package directions
  • 1 15-ounce can chickpeas, drained and rinsed
  • 1/4 cup olive oil, plus more as needed
  • 3 tablespoons lemon juice
  • 2-3 Persian cucumbers, thinly sliced
  • 1/2 red onion, diced
  • 1/4 cup chopped mint leaves (more whole leave to garnish)
  • 4 ounces feta (the kind that comes in the brine) crumbled or cubed
  • Kosher salt and freshly cracked black pepper to taste
  • Shredded rotisserie chicken
  • Red chili flakes for topping

Directions

  1. Cook the brown rice according to the package directions. Once cooked, remove to a bowl and set aside

  2. In a small bowl, whisk together the olive oil, lemon juice, salt and pepper to taste

  3. Add the romaine to a large bowl with sliced cucumbers, chickpeas, red onion, and mint

  4. Pour the dressing over the salad and toss well. Fold in the rice, feta and chicken. Serve the salad topped with an extra drizzle of olive oil, chili flakes, lemon and mint

  5. Enjoy!
