Grilled Artichokes with Lemon Garlic Aioli

Ingredients

  • 1 artichoke, cut in half lengthwise

  • 2 tablespoons olive oil
  • 1 garlic clove
  • Flaky sea salt
  • Lemon juice
  • Lemon Garlic Aioli

  • 1 tablespoon lemon juice

  • Pinch of salt
  • Pinch of pepper
  • 1 garlic clove, grated

Directions

  1. Heat olive oil and garlic clove in saucepan on stovetop until warmed through (can microwave for about 30 seconds instead). Discard garlic clove

  2. Brush artichoke halves with garlic oil, season with flakey salt, and squeeze lemon juice all over

  3. Wrap each artichoke half in tinfoil and cook on top rack of grill for about 20-25 minutes

  4. To make aioli, mix all ingredients together with immersion blender until well combined. Allow to chill in fridge for at least 30 minutes before serving
