Grilled Corn Salad

Ingredients

  • 3 ears of corn

  • 1 red bell pepper

  • 1/2 cup shredded Mexican blend cheese

  • 1/2 cup light mayo

  • 1/2 cup crushed Elote Corn Chip Dippers

  • 1/4 tsp black pepper 

Directions

  1. Preheat grill and coat corn and bell pepper with olive oil, salt and pepper. Cook on high, turning frequently, until charred all over. Remove from grill and set aside to cool

  2. Use a cutting board and sharp knife to cut kernals off of the cob. Add to a large bowl

  3. Peel charred skin off of red pepper and dice. Add to bowl with corn

  4. Add mayo and mix until corn and peppers are evenly coated

  5. Add cheese, black pepper and crushed corn chips. Stir together and serve immediately

  6. Enjoy!
