Grilled Mango Chipotle Chicken

Ingredients

  • 4 chicken breasts

  • 2 cups mango chunks

  • 3 chipotle chilis in adobo (can buy these canned, but if you cannot find them you can substitute these with 1 tbsp of chili seasoning)

  • Juice from 1 lime

  • ¼ cup of water

  • 1 tsp Trader Joe's Chili seasoning

  • 1 tsp salt + more for chicken

Directions

  1. Salt your chicken breasts on each side, and reserve to the side

  2. In a blender, blend together mango, chipotle chilis, lime juice, water, chili seasoning, and1 tsp of salt. Blend until very smooth

  3. Add half of the mango chipotle blend to the chicken and marinade 2 hours, or overnight. Save the remaining sauce in a container for service

  4. Turn a grill pan on high, or grill on high. Grill your chicken on each side for 5-8 minutes, making nice grill marks and flip. Cook on the remaining side until cooked through, when internal temperature reaches 160°F
