Memorial Day Weekend is almost here and Pat can't wait to kick off the summer with all the good eats that it brings! To get the party started, Pat has a brand new Grilled Veggie Platter with Whipped Feta recipe to share that is full of flavor and insanely delicious! You can even toss in some grilled chicken for a complete meal! Pat hopes you enjoy!
Butter for bread slices (optional, could also spray or drizzle with olive oil before grilling)
Basil for serving
Whipped Feta
4 ounces feta
4 ounces whipped cream cheese
1/2 tablespoon honey
1 tablespoon lemon juice
Directions
Preheat grill pan
Toss veggies with a drizzle of olive oil with a sprinkle of salt, pepper, and garlic powder to taste
Spray grill pan with olive oil spray to prevent sticking. Grill veggies and baguette slices in batches
Make whipped feta by mixing cream cheese, feta, lemon juice, and honey in food processor until smooth. If your dip is a little thick, you can add a teaspoon or two of half-and-half to thin it out
Serve veggies on platter with grilled bread and whipped feta. Top whipped feta with a tiny drizzle of honey and a few red chili flakes if desired
