
Grilled Watermelon & Halloumi Salad

Ingredients
arugula
watermelon
halloumi cheese
blueberries
lemon juice
tomatoes
cucumbers
mint
Directions
cut halloumi and watermelon into chunks
grill on medium for 2-3 minutes per side
assemble salad with arugula, chopped tomatoes and cucumbers, blueberries, grilled watermelon and halloumi and chopped mint leaves
squeeze lemon juice on top
add a drizzle of balsamic glaze
enjoy!
