Harvest Salad with Maple Balsamic Vinaigrette

Ingredients

  • 3 medium sweet potatoes, chopped small

  • 3 cups chopped kale

  • 1 cup cooked jasmine rice

  • 1/3 cup veggie broth

  • 1/3 cup raw pumpkin seeds

  • salt & pepper to taste

  • Maple Balsamic Vinaigrette Dressing

  • 2 tbsp olive oil

  • 1 tbsp maple syrup

  • 1 tbsp balsamic reduction

  • 1 tsp dijon mustard

Directions

  1. Cook rice according to package instructions

  2. Once you've prepped the veggies, sauté the sweet potatoes in olive oil or butter for 8-10 minutes until caramelized

  3. Add broth and then add kale

  4. Once kale starts to wilt, add rice and dressing

  5. Whisk together ingredients for dressing

  6. Add pumpkin seeds and serve with dressing! Enjoy!
