
Hassleback Truffle Pesto Sweet Potato

Ingredients
1 sweet potato
1 tablespoon of Trader Joe's Black Truffle Cashew Pesto Sauce
Olive oil
Salt
Rosemary, to garnish
Directions
Preheat oven to 425 degrees
Cut your sweet potato in 1/8th inch segments and be careful to not cut all the way through
Cover sweet potato with olive oil and salt and place in oven
Bake for 45 minutes to 1 hour, until potato is soft to touch
Top with black truffle pesto sauce, making sure it gets into those slices of potato
Garnish with rosemary
