Hassleback Truffle Pesto Sweet Potato

Ingredients

  • 1 sweet potato

  • 1 tablespoon of Trader Joe's Black Truffle Cashew Pesto Sauce

  • Olive oil

  • Salt

  • Rosemary, to garnish

Directions

  1. Preheat oven to 425 degrees

  2. Cut your sweet potato in 1/8th inch segments and be careful to not cut all the way through

  3. Cover sweet potato with olive oil and salt and place in oven

  4. Bake for 45 minutes to 1 hour, until potato is soft to touch

  5. Top with black truffle pesto sauce, making sure it gets into those slices of potato

  6. Garnish with rosemary

  7. Enjoy!
