Hearts of Palm Veggie Pad Thai

Ingredients

  • 1 box of hearts of palm pasta

  • 1/2 red bell pepper, sliced

  • 1 large carrot, sliced

  • 1 egg

  • 2 teaspoons of minced ginger

  • Sauce

  • 1.5 tablespoons peanut butter

  • 1/2 tablespoon honey

  • 1 tablespoon rice vinegar

  • 1/2 teaspoon fish sauce

  • 2 tablespoons soy sauce

  • red pepper flakes

  • Garnish

  • chopped peanuts (or almonds)

  • green onions

  • cilantro

  • lime juice

Directions

  1. mix all the sauce ingredients together and set aside

  2. over medium heat, sauté ginger, bell pepper and carrots and mix well

  3. add in hearts of palm. Mix well and cook for 5 minutes

  4. push veggies to the side and scramble 1 egg until cooked. Mix with veggies

  5. stir in sauce, mix well and stir until well coated

  6. plate and add all the toppings

  7. enjoy!
