Holiday Hash Salad with Maple Tahini Dressing

Ingredients

  • 1 18 oz. package Trader Joe’s Holiday Vegetable Hash

  • 4 cups raw kale

  • 1/3 cup chopped walnuts

  • 1/4 cup dried cranberries

  • Salt & pepper, to taste

  • Sweet & Spicy Maple Tahini Dressing

  • 1/4 cup tahini

  • 1/4 cup avocado or olive oil

  • 2 tbsp apple cider vinegar

  • 1 1/2 tbsp maple syrup

  • 1/2 tbsp crushed red pepper

  • 2 tbsp warm water

Directions

  1. Heat 1-2 tbsp avocado oil in a pan on the stovetop

  2. Once heated, add in full Holiday Vegetable Hash package

  3. Sauté hash for 10-12 minutes, or until hash begins to soften

  4. Remove hash from heat, and combine with kale, while still warm

  5. Add in chopped walnuts & dried cranberries

  6. Make maple tahini dressing by combining all dressing ingredients & mixing well

  7. Pour dressing over salad & mix well (there will be extra dressing, save on the side)

  8. Add salt & pepper, to taste. Mix well and enjoy!

Recipe Note

This salad can be served warm or cold, but keep any leftovers stored in the fridge!
